Eggnog Latte Coma and Banana Muffins to Die For!

Good afternoon my friends,

Well, as my baby has nap #2 of the day, I am sitting in the haze of an eggnog latte coma and my tummy is full of the best banana muffins ever!
Eggnog latte- I cannot take credit for.  It’s a Starbucks masterpiece and I love it with every fibre of my being…lol!  I think I like it more then the Pumpkin Spice latte, which I really do love.  The Carmel Brulee is next on my list.  I do believe that from October – Decemeber I could single handedly keep my Starbucks going.  I drink way too many of their delicious specialty drinks during those months.

However, the real reason for my post today is to share with you all the greatest banana muffin recipe.  I had some almost ready to be thrown out bananas sitting on my counter.  I find they don’t freeze well for baby food and, even though Zachary loves them a lot, he really only has half of one two times a week.  I detest throwing out food so, I put on my Suzie Homemaker hat and decided to make muffins during his afternoon nap.  I don’t really know what possessed me to do it, but I did.

I have an old recipe for banana muffins that I have tweaked over the years.  I don’t know where the original one came from, but I think I have finally figured out the key to great muffins- a little less sugar and FOUR bananas.  They turn out incredibly moist with that extra banana and, as I already find bananas pretty sweet when baked, they don’t need that much sugar.

I count banana muffins as a fruit serving, so eat up!!!

Best Banana Muffins EVER!
4 Large very ripe Bananas, mashed (leave them a bit chunky)
1/2 cup white sugar
1 slightly beaten egg
1/3 cup melted butter
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt (if you used salted butter, cut this down a bit)
1 1/2 cups flour

Mix the mashed banana, sugar, egg and butter together.  Add baking soda, baking powder, salt and flour.  Mix together, being careful not to overstir!
Pour into greased muffin tins, back at 350 degrees for approximately 20 minutes (mine were ready after 17 minutes though, so keep an eye on them).
I’m going to let you in on my little secret…for a really yummy and tasty suprise, drop a mini reese peanut butter cup or a dollop of peanut butter into the centre of each muffin before baking.  It makes them even more amazing!  And peanut butter is a protein…so fruit, carbs and protein all in one muffin;)  See how my mind works???

    Like mother….like daughter you say?
    I sit here reading your blog sipping on a Egg Nog Latte as well! Dad is trying the Creme Brule. I sneaked a bit of the Creme Brule and it was delicious as well!

    The banana muffins sound & look delicious!

    i've had bananas in my freezer for 5 months, going on 6, with the intension to make something of them. this might work, but are my bananas still good?

    althought i love strbx eggnog, the best is second cup's noel nog because they use double shots in their smalls. double shots is where its at.

    Amy- try them…what's the worst that could happen right? I find them super mushy and disgusting, but they might bake well…

    Actually "super mushy" bananas make the best muffins.
    The good cooks in Saskatchewan taught me to freeze really ripe bananas…they are perfect for banana bread/muffins!

    Oh WOW…I am going to Starbucks tomorrow on my way to the grocery store…I cannot wait! I will also be trying that recipe…sounds awesome!
